Ingredients
- •1 lb ground chicken or turkey
- •1 medium onion (diced)
- •3 cloves garlic (minced)
- •1 (4 oz) can diced green chiles
- •3 cups chicken broth
- •1 tbsp cumin
- •1 tsp oregano
- •1/2 cup full-fat canned coconut milk (or cashew cream)
- •salt and pepper to taste
- •Cassava tortillas for serving
Instructions
- 1.In a large pot or Dutch oven, sauté the onion and garlic over medium heat until softened.
- 2.Add the ground poultry and cook until browned, breaking it apart as it cooks.
- 3.Stir in the green chiles, cumin, oregano, salt, and pepper.
- 4.Pour in the chicken broth, bring to a boil, then reduce heat and simmer for 20 minutes to let the flavors meld.
- 5.Remove from heat and stir in the coconut milk to create a creamy base.
