Ingredients
- •1 small onion
- •6 medium carrots
- •1 head cauliflower
- •1 bunch cilantro
- •3 cloves garlic
- •1 inch fresh ginger
- •1 1/2 pounds taro roots
- •1/4 cup coconut oil, or other cooking fat
- •2 teaspoons ground cinnamon
- •2 teaspoons ground ginger
- •2 teaspoons ground turmeric
- •2 teaspoons sea salt
- •1/2 cup water
Instructions
- 1.Prep your line: chop the onion, carrots, cauliflower, and cilantro. Mince the garlic and grate the ginger. Wash, peel, and cube the taro root.
- 2.Drop the taro root into a pot with enough water to cover them, cover, and bring to a boil. Lower the heat and let it simmer for about an hour until fork-soft.
- 3.In a large saucepan, heat your cooking fat over medium. Toss in the onion, garlic, cinnamon, ginger, and turmeric, sautéing for 5 minutes until translucent and insanely fragrant.
- 4.Dump the carrots, cauliflower, cooked taro root, cilantro, grated ginger, and salt into the spiced oil. Mix well to coat everything.
- 5.Pour in the water, bring to a simmer, cover, and let it cook for 15-20 minutes until the carrots are tender. Serve steaming hot!
