Ingredients
- •2 tablespoons coconut concentrate
- •2 tablespoons filtered water, warm
- •1 tablespoon extra virgin olive oil
- •1 1/3 cloves garlic
- •1 pinch of sea salt
- •3 large sweet potatoes
- •1/4 cup solid cooking fat (AIP options: coconut oil, lard, or tallow)
- •sea salt, to taste
Instructions
- 1.Preheat your oven to 400F. Soften your coconut concentrate in a warm water bath first so it's smooth and easily measurable.
- 2.Make the garlic dipping sauce: Throw the softened coconut concentrate, warm water, olive oil, garlic cloves, and a pinch of salt into a blender. Blast on high for 1-2 minutes until a thick sauce forms.
- 3.If your sauce is looking too thick, blend in extra water one teaspoon at a time until it's smooth and dippable.
- 4.Cut your peeled sweet potatoes into uniform 1/2-inch thick fries and melt your cooking fat.
- 5.Toss the fries in a large bowl with the melted fat and salt. Arrange them on baking sheets with plenty of breathing room—this space is critical for maximum crispiness!
- 6.Bake for 10 minutes, pull them out to flip, and bake for another 10 to 15 minutes until golden-crisp. Dust with sea salt and serve with your fresh garlic sauce!
