Ingredients
- •2 lbs chicken breasts
- •5 big carrots, chopped
- •1 1/2 big onion, roughly chopped
- •2 1/2 apples, roughly chopped - skin on
- •10 pitted plums
- •1 can of full fat coconut milk (13.5 FL OZ or 398 ml)
- •2 TSP salt or more to taste
- •Some fresh sage, chopped, for the final garnish
Instructions
- 1.Chop the chicken into hefty chunks and toss them into the bottom of your slow cooker.
- 2.Layer on the carrots and onions, then cap it off with the chopped apples right on top.
- 3.Drop in exactly 10 plums. Resist the urge to go crazy here unless you want your dinner tasting like dessert.
- 4.Flood the whole masterpiece with the full-fat coconut milk.
- 5.Set it to Low, walk away, and let it work its magic for 8 glorious hours.
- 6.Right before serving, grab two big wooden spoons, add salt to taste, and give everything a vigorous mix.
- 7.Plate it up, slap a handful of fresh sage on top for garnish, and dive in!
