- •2 lbs bone-in chicken thighs or drumsticks
- •4 scallions (chopped)
- •1 scotch bonnet or jalapeño pepper (seeded)
- •3 cloves garlic
- •1 inch fresh ginger (peeled)
- •1 tbsp fresh thyme
- •1 tbsp allspice
- •1/4 cup coconut aminos
- •2 tbsp olive oil
- •2 tbsp fresh lime juice
Instructions
- 1.In a blender or food processor, combine the scallions, pepper, garlic, ginger, thyme, allspice, coconut aminos, olive oil, and lime juice. Blend until a smooth paste forms.
- 2.Coat the chicken completely in the jerk marinade. (Optional: marinate in the fridge overnight for deeper flavor).
- 3.Place the chicken and all the marinade into the slow cooker.
- 4.Cook on Low for 6-8 hours or High for 3-4 hours, until the chicken is tender and falling off the bone.
