- •8 eggs
- •1/2 medium yellow onion
- •1/2 red bell pepper
- •1 pound mushroom
- •8 ounces pork sausage
Instructions
- 1.Get an oven-safe skillet hot over medium-high heat and crank your oven broiler up to High.
- 2.Whisk your eggs in a bowl. Dice the onion and bell pepper, and slice your mushrooms.
- 3.Strip your sausage out of its casing if it has one. Throw it into the hot skillet, breaking it apart with a wooden spoon as it cooks.
- 4.Toss the onion, pepper, and mushrooms right in with the sausage fat. Sauté for 8-10 minutes until the veggies are completely tender.
- 5.Pour in your whisked eggs and let them cook undisturbed on the stovetop for 1-2 minutes, stirring just a couple of times to let the raw egg hit the bottom.
- 6.Slide the whole skillet straight under the oven broiler. Watch it like a hawk for 7-10 minutes until the eggs are puffed up, completely set, and beautifully golden on top!
