- •2 large semi-ripe plantains
- •coconut oil, or lard
- •1/2 white onion
- •sea salt, to taste
- •1 cup arugula
- •1/2 cup fresh parsley
- •fresh cilantro
- •2 cloves garlic
- •1 lime
- •1 large ripe avocado
- •2 teaspoons apple cider vinegar
Instructions
- 1.Leave the peels on your plantains and slice them into thick 2-inch chunks. Score the peel vertically on one side of each piece, then easily strip it off.
- 2.Heat your cooking fat in a large skillet over medium-high until hot. Use a slotted spoon to gently lower the plantain chunks into the oil and fry until just lightly golden on each side. Move to a plate to cool.
- 3.While they cool, mince your white onion, mash your avocado with lime juice, cilantro, garlic, salt, and vinegar to create your fresh guacamole.
- 4.Once the fried plantain chunks are cool enough to handle, use the flat bottom of a glass or a sturdy spatula to smash down on each chunk until it flattens into a thick patty.
- 5.Return the smashed patties back into the hot oil for round two! Fry for 2-3 minutes per side until deeply golden brown and incredibly crispy.
- 6.Drain on paper towels, dust immediately with sea salt, and serve hot piled high with fresh arugula, your homemade guacamole, and fresh parsley.
