- •1 medium green plantain
- •1/4 cup extra virgin olive oil
- •1/2 teaspoon sea salt
- •1/3 cup coconut milk
- •1 cup cassava flour
Instructions
- 1.Preheat your oven to 425F, then peel and rough-chop your green plantain.
- 2.Throw the plantain, olive oil, sea salt, and coconut milk into a blender and blast on high for 1-2 minutes until it turns into a completely smooth puree.
- 3.Dump the puree into a bowl, add the cassava flour, and work it with your hands until a sticky, firm dough forms.
- 4.Divide the dough into 6 equal pieces and roll them into 2-inch balls. Place them on a baking sheet and score a shallow 'X' on top of each roll with a sharp knife.
- 5.Bake for 25 minutes until set. Let them cool for at least 5 minutes before slicing open and serving!
