- •1/2 cup coconut oil
- •2 large green plantains
- •1/2 teaspoon coarse sea salt, to taste
Instructions
- 1.Preheat your oven to 300F and line a rimmed baking sheet with parchment paper. Melt your coconut oil if it's solid.
- 2.Toss the chopped plantains, melted oil, and sea salt into your blender or food processor. Blend on high for 2-4 minutes until it forms a perfectly smooth, silky puree.
- 3.Pour the batter onto your prepared sheet and use a rubber spatula to smooth it out into a uniform layer about 1/8-inch thick.
- 4.Bake for 10 minutes, then pull it out. Use a pizza cutter or pastry wheel to score the batter into your perfect cracker sizes.
- 5.Pop them back into the oven and bake for 50-80 minutes. Keep a close eye on them—don't pull them out until they hit a beautiful medium shade of golden brown.
- 6.Let them cool slightly on the pan, transfer them to a cooling rack to crispy up completely, snap them apart, and store in an airtight jar!
