- •1/4 cup extra virgin olive oil
- •1 onion
- •4 cloves garlic
- •1 pound mushroom, (shiitake cremini portobello)
- •1 teaspoon coarse sea salt, plus more to taste
- •ground black pepper, to taste
- •1/4 cup red wine, or beef broth
- •1/2 cup coconut milk
- •3 sprigs fresh thyme
Instructions
- 1.Chop the onion, mince the garlic, and wipe down your mushrooms before slicing them and discarding the tough stems.
- 2.Get a large skillet hot over medium heat and add a generous swirl of olive oil or ghee.
- 3.Toss in the onion and garlic, sautéing for 5 minutes until they turn a beautiful golden brown.
- 4.Add the mushrooms, season generously with salt and pepper, and cook until they soften down into a rich, stew-like texture.
- 5.Pour in the red wine (or beef broth) and coconut milk, stirring to scrape up all the pan flavor.
- 6.Drop the heat to low, stir in the fresh thyme sprigs, and let it simmer for a few minutes until beautifully thick and luxurious.
