- •1 bunch fresh parsley
- •1 bunch radish
- •2 carrots
- •1 cucumber
- •1/2 small jicama
- •8 kalamata olives
- •1 tablespoon fresh mint
- •1/2 lemon
- •1/4 cup extra virgin olive oil
- •2 tablespoons apple cider vinegar
- •sea salt, to taste
Instructions
- 1.Finely chop your parsley, radishes, carrots, cucumber, and peeled jicama. Mince your olives and mint, and squeeze your fresh lemon juice.
- 2.Dump the prepped parsley, radishes, jicama, carrots, cucumber, olives, and mint into a massive salad bowl and toss to combine.
- 3.In a small bowl, whisk together the extra virgin olive oil, apple cider vinegar, fresh lemon juice, and sea salt until fully EMULSIFIED.
- 4.Pour the dressing over your vibrant veggie mix, toss thoroughly to coat, and serve it up raw and crunchy!
