Ingredients
- •1 organic whole chicken about 4 pounds
- •2 teaspoons Diamond Crystal kosher salt
- •¼ teaspoon freshly ground black pepper
- •2 tablespoons ghee
- •2 large onions chopped medium
- •6 garlic cloves peeled
- •2 teaspoons tomato paste
- •½ cup Instant Pot bone broth or chicken stock
- •2 tablespoons arrowroot powder
Instructions
- 1.Pat the chicken completely dry and season it aggressively with salt and pepper.
- 2.Set your Instant Pot to 'Sauté' mode, melt the ghee, and sear the chicken on all sides until the skin is golden brown, then pull it out.
- 3.Toss the chopped onions, garlic, and tomato paste into the pot. Sauté for 3 minutes, then pour in the broth, scraping up all those tasty bits stuck to the bottom.
- 4.Place the trivet into the Instant Pot. Return the chicken to rest on the trivet, lock the lid, and pressure cook on High for 25 minutes. Let it naturally release for 10 minutes.
- 5.Remove the chicken. Turn 'Sauté' back on, whisk the arrowroot powder with a splash of cold water, stir it into the bubbling pot liquid to create a thick gravy, and serve!
