- •1 tablespoon avocado oil
- •1 large yellow onion diced
- •1 small red bell pepper diced
- •Diamond Crystal kosher salt
- •2 tablespoons tomato paste
- •4 garlic cloves minced
- •2 pounds ground beef 85% lean, 15% fat
- •3 tablespoons chili powder
- •1 tablespoon dried oregano
- •1 tablespoon ground cumin
- •¼ teaspoon cayenne pepper optional
- •1 (14.5 ounce) can fire-roasted diced tomatoes, drained
- •½ cup chicken broth
- •2 teaspoons Red Boat fish sauce
- •1 tablespoon apple cider vinegar optional
Instructions
- 1.Hit 'Sauté' on your Instant Pot and heat up the avocado oil. Throw in the onion and bell pepper with a pinch of salt, cooking for 4 minutes.
- 2.Stir in the tomato paste and garlic for 1 minute, then dump in the ground beef. Cook and break it apart until completely browned.
- 3.Dump in all the spices, fire-roasted tomatoes, broth, and fish sauce. Give it a massive stir.
- 4.Lock the lid, seal the valve, and pressure cook on High for 10 minutes. Quick-release the steam, stir in a splash of apple cider vinegar for that extra punch, and bowl it up!
