- •1/2 cup coconut concentrate
- •1/2 cup filtered water
- •1 teaspoon apple cider vinegar
- •1/4 teaspoon sea salt
Instructions
- 1.Pro-tip: Soften your coconut concentrate jar in a warm water bath first so it's liquid and easy to measure.
- 2.Juice your limes and finely mince the fresh ginger.
- 3.Throw the lime juice, minced ginger, softened coconut concentrate, water, apple cider vinegar, and sea salt into a blender. Blitz for 1 minute until creamy and fully emulsified.
- 4.If it's looking too thick, blend in extra water one tablespoon at a time until it hits your perfect consistency.
- 5.Store in a jar in the fridge. Note: it will harden when chilled, so let it come to room temp or give it a brief warm water bath before dressing your salad!
