- •1 pound shrimp
- •3 tablespoons extra virgin olive oil
- •12 cloves garlic
- •1/2 lemon
- •1 teaspoon coarse sea salt
- •3 avocados
- •2 carrots
- •8 roasted seaweed sheets
Instructions
- 1.Peel and devein your shrimp. Heat your olive oil in a large skillet over medium, throw in the minced garlic, and sauté until soft and fragrant.
- 2.Toss the shrimp into the garlic oil and sauté for 6-8 minutes until perfectly pink and opaque. Pull from heat, squeeze fresh lemon juice over them, and dust with salt.
- 3.While your shrimp are sizzling, slice up your avocados and grate the carrots.
- 4.Build your rolls: Lay down a sheet of roasted nori, pile it with garlic shrimp, creamy avocado slices, and crunchy grated carrots.
- 5.Hit it with a final pinch of salt, roll it up tight, and enjoy!
