- •15 ounces mandarin oranges
- •1 1/2 teaspoons extra virgin olive oil
- •1/8 teaspoon sea salt
- •2 tablespoons coconut oil
- •1 clove garlic
- •1/4 onion
- •24 ounces white fish fillets, such as cod
- •1/4 teaspoon sea salt
- •1 head romaine lettuce, large
Instructions
- 1.Make the salsa: Peel, pit, and dice the avocado, chop the fresh cilantro, and juice the lime. Gently toss them in a bowl with the mandarin oranges and a splash of olive oil and salt, then set aside.
- 2.Prep the fish: Heat your coconut oil in a large skillet over medium. Grate the garlic and mince the onion. Add the grated garlic and minced onion to the hot oil and sauté for 1-2 minutes until fragrant and softened, being careful not to burn.
- 3.Season your white fish fillets with sea salt. Carefully place the fish fillets into the skillet with the sautéed garlic and onion, then sear for 3-4 minutes per side until opaque and flaky.
- 4.Transfer the fish to a plate, flake it into chunks with a fork, and pile it high into crisp romaine lettuce leaves or clean grain-free wraps.
- 5.Spoon the sweet-and-savory mandarin avocado salsa right over the top and enjoy!
