- •2 medium sweet potatoes, peeled and cubed
- •3 tbsp tapioca starch
- •1/2 tsp onion powder
- •1/2 tsp sea salt
- •2 tbsp melted coconut oil or olive oil
Instructions
- 1.Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2.Boil the sweet potato cubes until fork-tender. Drain well and let them cool slightly.
- 3.Mash the sweet potatoes in a bowl until smooth. Stir in the tapioca starch, onion powder, and sea salt until well combined.
- 4.Using your hands, form the mixture into small, bite-sized tot shapes and place them on the prepared baking sheet.
- 5.Drizzle with the melted oil.
- 6.Bake for 20-25 minutes, flipping halfway through, until the tots are golden brown and crispy on the outside.
