Ingredients
- •1 cup (120 g) Otto's Cassava Flour
- •3 scoops (1/2 cup or 53g) clean plant/beef based protein powder
- •2 Tbsp Maple or Coconut Sugar
- •2 Tbsp Unsweetened Cocoa Powder
- •1/2 tsp Baking Powder
- •1/4 tsp Baking Soda
- •1/8 tsp Sea Salt
- •1 Egg
- •1/4 cup Ghee
- •1 cup Dairy-Free Milk
- •1 Tbsp Apple Cider Vinegar
- •More Ghee or Avocado Oil for cooking
Instructions
- 1.Stir the dairy-free milk and apple cider vinegar together and let it sit. It will curdle a bit—don't panic, we're making dairy-free buttermilk!
- 2.In a medium bowl, whisk together the cassava flour, protein powder, sugar, cocoa powder, baking powder, baking soda, and salt until uniform.
- 3.Whisk the egg in a separate bowl, then beat in the melted ghee and your homemade buttermilk. Gently stir the dry mix into the wet until just combined.
- 4.Heat a skillet over medium with a dollop of ghee or avocado oil. Pour the batter, flip when bubbles form, and cook until fluffy!
