Ingredients
- •3 cloves garlic
- •8 chicken thighs, boneless and skinless
- •2 tablespoons extra virgin olive oil
- •1/4 cup balsamic vinegar
- •1/4 cup red wine vinegar
- •3 ounces capers
- •6 ounces green olives, pitted
- •1 cup prunes, pitted
- •1 tablespoon oregano
- •2 bay leaves
- •1 teaspoon coarse sea salt, to taste
- •ground black pepper, to taste
Instructions
- 1.Crank your oven to 350F and mince your garlic cloves.
- 2.Arrange the chicken thighs in an oven-safe baking dish, then dump in the garlic, olive oil, both vinegars, capers, green olives, prunes, and oregano.
- 3.Season with sea salt and black pepper, then flip the chicken a few times to ensure it's completely drenched in that incredible flavor combo.
- 4.Bake uncovered for 25 minutes until the chicken is cooked through and juicy, then serve immediately!
