- •2 lbs chicken thighs
- •Salt
- •Extra virgin olive oil
- •6 portobello mushrooms, chopped
- •1 teaspoon Italian seasoning or your favorite spice blend
- •½ teaspoon onion powder
- •½ teaspoon garlic powder
- •1/2 cup bone broth
Instructions
- 1.Generously salt your chicken thighs. Get a skillet hot over medium-high heat with a solid coat of olive oil.
- 2.Sear the chicken for about 3 minutes per side until beautifully browned, then transfer them to a plate.
- 3.Toss the chopped portobellos into the same pan and sauté for 3 minutes until they soak up all those gorgeous pan juices.
- 4.Stir the Italian seasoning, onion powder, garlic powder, and 1/2 cup bone broth into the mushrooms and bring it to a rolling boil.
- 5.Nestle the chicken thighs back into the bubbling mushroom sauce, lower the heat, and simmer for 3-5 minutes until fully cooked through. Plate it up!
