Ingredients
- •1 head cauliflower
- •1/2 onion
- •3 tablespoons fresh dill
- •1 pound spinach
- •6 tablespoons extra virgin olive oil
- •3 tablespoons chicken stock, or filtered water
- •1 lemon
- •coarse sea salt, to taste
Instructions
- 1.Chop your cauliflower into florets and pulse them in a food processor until they hit a perfect, rice-like texture. Mince your onion and dill, and roughly chop the spinach.
- 2.Heat a splash of olive oil in a large pan over medium-high and sauté the onion until beautiful and translucent.
- 3.Pour in half of your remaining olive oil along with the cauliflower rice and sauté for 4-5 minutes.
- 4.Pour in the chicken stock, slap a lid on it, and let the rice steam for 2 minutes.
- 5.Remove the lid, stir in the rest of the olive oil, chopped spinach, and dill, cooking just until the greens wilt down. Finish with a fresh squeeze of lemon juice and salt to taste!
