- •1 head savoy cabbage
- •1 small red onion
- •3 carrots
- •1 handful fresh parsley
- •2 blood oranges
- •4 tablespoons extra virgin olive oil
- •2 teaspoons coconut vinegar
- •1 tablespoon sea salt
- •2 avocados
Instructions
- 1.Get your prep out of the way: Shred the cabbage, thinly slice the onion, grate the carrots, chop the parsley, juice the blood oranges, and cube the avocados.
- 2.In a large salad bowl, toss together the shredded cabbage, onion, carrots, and most of the parsley.
- 3.In a smaller bowl, whisk the fresh blood orange juice, olive oil, coconut vinegar, and salt until well blended.
- 4.Pour the vibrant dressing over the cabbage mix, toss well to coat, and crown it with the cubed avocado and remaining parsley.
