- •1 1/2 inches ginger
- •3 cloves garlic
- •1 lemon
- •1/2 cup coconut water, or filtered water
- •2 bunches fresh basil
- •1/4 cup extra virgin olive oil
- •1 tablespoon ume plum vinegar
- •3 sprigs fresh mint
Instructions
- 1.Peel and rough-chop the ginger, chop the garlic, and juice the fresh lemon.
- 2.Throw the ginger, garlic, lemon juice, coconut water, basil, olive oil, plum vinegar, and mint into a high-powered blender.
- 3.Blast it on high for 15 seconds. Stop and scrape down the sides if needed, then blend until it reaches your perfect pesto consistency.
- 4.Pour it into an airtight jar and store in the fridge for up to a few days of fresh flavor.
