- •1/2 pound bacon, thinly sliced
- •3 apples, peeled and chopped
- •1/3 cup minced shallots
- •3/4 pound chicken liver
- •Fine sea salt, to taste
- •Handful fresh thyme, minced, plus extra for garnish
Instructions
- 1.Toss the sliced bacon into a cold skillet and turn the heat to medium. Cook until perfectly crisp, then pull the bacon out, leaving that liquid-gold grease in the pan.
- 2.Throw the chopped apples and minced shallots straight into the hot bacon fat. Sauté for 5 minutes until they start to soften and caramelize.
- 3.Add the chicken livers and fresh thyme to the skillet. Cook for about 3-4 minutes per side—you want them beautifully browned on the outside but still slightly pink and tender in the center.
- 4.Toss the crispy bacon back into the pan, season with sea salt to taste, give it a quick stir, and serve hot!
