- •4 teaspoons coconut oil
- •8 eggs
- •4 tablespoons filtered water
- •1 cup arrowroot
- •4 teaspoons coconut flour
- •4 pinches coarse sea salt
Instructions
- 1.Melt your coconut oil over low heat if it's solid, then let it cool back down to room temp.
- 2.Crack the eggs into a medium bowl and whisk vigorously with the cooled coconut oil and water.
- 3.Dump in the arrowroot, coconut flour, and salt, and beat the batter until completely smooth.
- 4.Heat a small skillet over medium. Pour in a thin layer of batter and immediately swirl the pan around to coat the bottom. Watch for the edges to start lifting.
- 5.Cook for 1 minute per side, flip carefully, and repeat until you run out of batter. Let them cool completely before stacking in an airtight container!
